Andrea’s Super Easy Lemon Drizzle Cake

I love making this super easy lemon drizzle cake because it works every time. The only thing you might want to change is the amount you make because this lot won’t last long!

Time: 30 mins

Lemon Drizzle Ingredients:

  • 200g caster sugar
  • 90g butter
  • 2 eggs
  • 125ml milk
  • 150g plain flour
  • zest of 1 lemon
  • 1 1/2 tsp baking powder
  • pinch of salt
  • for syrup: 130g caster sugar, juice of 1 lemon
  • for icing: 1 tbsp water and 125g icing sugar
  • garnish: lemon zest

Method:

Oven 180C / Gas 4

  • cream the butter, caster sugar and lemon zest
  • add eggs and milk and mix to a smooth texture
  • slowly add flour, baking powder and salt
  • mix until smooth
  • pour mix into a 25cm square tin
  • cook for 25 mins
  • meanwhile make the syrup by mixing sugar and lemon juice
  • remove the cake from the oven
  • prick cake with a fork or tooth pick
  • pour the syrup over the cake while it’s still warm
  • cook for a further 5 minutes
drizzling icing on lemon drizzle cake
The icing should be roughly drizzled to give the cake a rustic feel
  • allow the cake to cool and drizzle with icing
  • cut into triangles and sprinkle with extra zest

Enjoy with lemon and ginger tea or fresh lemonade. Lovely!
